Pesto Feta Eggs

Add a bit of pizzazz to your breakfast with these pesto feta eggs. Classic fried eggs, with rich feta and pesto, laid on top of a toasted tortilla and fresh smashed avocado. 

This is another viral recipe that has taken food TikTok by storm. Whilst I’m not typically one to make viral recipes while they’re actually trending, these feta eggs are everywhere! With so many variations on how people serve and top these, I had to try it myself. 

However, after trying these feta fried eggs myself it’s no wonder they have gained this popularity! With a golden feta base and a perfectly cooked sunny side up egg on top, these are a great simple way to start your day with flavour! Although, this definitely does not just have to be breakfast food… I actually tried these for dinner first and it was perfect for a weeknight meal. 

Now we know feta and eggs is not a new combination, and has often been seen in scrambled eggs or shakshuka, but this concept is different. The feta gets crumbled into the hot pan first, allowing it to form a gorgeous crispy base for the eggs to go on top of. 

This dish actually surprised me as someone who would not normally choose to have eggs as the main focus of a dish. I like a fried egg on a burger, but otherwise I’m not a huge fan of eggs in general. However, these pesto feta fried eggs have shifted that, this is definitely an egg focused dish I will choose to be making again!

Key Ingredients

  • Eggs: no duh… 
  • Tortilla: I chose to go for a corn tortilla, but any tortilla will work.
  • Feta: there are two types, cow milk or goat milk. I used cow feta as it tends to be more mild than goat feta, it’s more creamier and buttery in flavour. 
  • Pesto: can be homemade or store bought. For convenience I chose store bought, this makes the dish extra easy. 

How to make the pesto feta fried eggs

Melt the feta cheese.

In a medium-high heat pan, crumble feta in a circular shape. You want it to have an empty centre, otherwise the feta will cook faster than the egg – resulting in burnt feta. 

Add the egg.

One the feta appears to be melting, crack the egg into the middle of the circle. Fry the egg to your preferred form, personally I like mine sunny side up, and on the runny side. If you prefer your eggs more cooked, just be cautious on not burning the feta underneath. 

Place the pesto.

When the egg is about halfway cooked, grab the pesto and a spoon. Gently place the pesto around the outside of the yolk. Try not to disturb the yolk. 

Spread the avocado.

When the egg is almost finished, spread some smashed avocado onto your tortilla. Spread almost like butter. 

Serve the pesto feta egg. 

Use a spatula to carefully take the pesto feta fried egg out of the pan, and place onto the tortilla with avocado. To eat it, fold the tortilla in half so that it pops the yolk. When the yolk mixes in the pesto and feta egg it adds the beautiful creaminess. 

Customization of pesto feta eggs

Many videos that popped up on my for you page used chilli oil or a chilli crisp (which I’m sure is also delicious!), but I opted to use pesto. This is partially due to my lack of enjoying spicy things… but also the pesto compliments the feta oh so well. The pesto really enhances this dish, it adds a nice herby flavour. After trying the original pesto feta fried eggs, which is this recipe, I added parmesan cheese and aioli the next time. This was delicious too. It’s super customizable which is part of what makes it amazing. 

The simplicity of this dish is a big reason why a dish like this goes viral, it’s super simple and anyone can make it. The feta fried eggs are very customisable too; cook the eggs to a different consistency, change the topping, use toast instead of a tortilla… you get the point!

These eggs are far more exciting than the standard plain eggs on toast, no hate to the OG’s though… They’re super quick and easy, they take less than 10 minutes! They are also a great healthy meal, and will keep you full. The saltiness of the feta, herbiness of the pesto, and runny yolk of the egg are sure to satisfy!

Ingredients
  

  • ½ avocado
  • 2 tbsp feta
  • 1 tbsp parmesan
  • 2 tbsp pesto
  • 1 eggs
  • 1 corn tortilla

Instructions
 

  • Add feta cheese to a pan in a circle formation, leave it to melt slightly then add the parmesan to the circle.
  • Crack in your egg in the middle of the cheese.
  • Let the feta, parmesan, and egg fry on a medium-high heat.
  • When the egg is almost fully cooked, add your preferred amount of pesto on top.
  • Serve on a tortilla with smashed avocado.
