If you are looking for a fun and super comforting dinner, these potato top sausage rolls are a must try – don’t be fooled by the lacklustre appearance! Juicy pork sausages, wrapped in a pillowy bread roll, with flavourful onion gravy, all topped by cheesy mashed potato… drooling thinking back to it!
Now, this meal is far from healthy, but boy does it taste amazing! This is a simple version, no fuss with mince or pastry. Similar to a potato top pie you would get from the local bakery.
Key Ingredients
- Onion is the star of the gravy. Sauteed and lightly caramelised, they add a gorgeous sweetness that contrasts the salty bisto and oxo. This aromatic builds the perfect base flavour for the gravy.
- Potatoes are for the ‘potato top’ of course. I chose to go for simple white potatoes, no mess trying to wash the dirt off. You can either go for peeled or unpeeled, it really depends on your personal preference. I prefer peeled for something like this.
- Beef sausages of good quality if you can get them. I’ve made a habit of getting our meat from the local butchers nowadays, and man it definitely makes a difference. Our butcher has weekly special sausages, with varying flavours – for these I opted for beef with truffle and parmesan… delicious! But a plain beef sausage will work just fine.
- Dairy that goes into the mash involves butter, cheese, and cream. When mashed with the potato they add a beautiful flavour, and a velvety smooth texture to contract the sausage rolls. Butter is also used when sauteing the onions.
- Bread rolls do not have to be of the highest quality. Simple long bread rolls are what you will need, big enough to fit a sausage inside.
- Gravy components will be soy sauce, bisto, beef oxo cube, and water. These savoury elements compliment not only each other, but also the subtle sweetness of the onions as well.
How to make these scrumptious potato top sausage rolls
First step.
Preheat your oven to 200℃.
Make the mash potato.
Peel and chop your potatoes into small-medium size pieces. Add to a pot of salted boiling water. Cook for 12 minutes, or until tender. Drain the potato, add the butter, pour in the cream, and add the grated cheese. Give this all a mash, until the potatoes are smooth. Set aside.
Cook the sausages.
Reduce the oven to 180℃. Place the sausages in a baking dish, then into the oven for 15 minutes. When the 15 minutes has finished, flip the sausages and cook for a further 10 minutes in the oven.
Saute the sliced onion.
While the sausages are cooking in the oven, start with the onions for the gravy. Peel and thinly slice the onion, then add to a pan with a knob of butter. Saute the onions on a medium heat, to lightly caramelise.
Create the gravy.
Once the onions have a nice light caramel colour, add a dash of soy sauce, beef oxo cube, and a couple tablespoons of bisto powder. Give everything a stir until the onions are coated. Pour in the water and mix until the gravy has thickened.
Assemble the potato top sausage rolls.
Slice a thin layer off the top of the bread rolls, then scoop out the inside – creating a crater in the centre of the roll. Place the sausage into the bun, pour some gravy in, then place a good dollop of the mashed potato over top. Sprinkle on some extra grated cheese if you would like. Repeat until you have 4 potato top sausage rolls.
Broil and enjoy.
Place the potato top sausage rolls into the oven for 10 minutes at 200℃ – or until golden on top. Serve and enjoy!
Storage
These potato top sausage rolls are not particularly something that will last too long in the fridge. Allow the rolls to cool to a lukewarm/room temperature, then store in an airtight container. Keep in the fridge for up to 2 days. If left too long, the bread will turn soggy, and we do not want that!
