  • Mushrooms: I personally prefer the button variety when it comes to using them in cooking. The mushrooms are tender and add a delicious umami flavour to balance out the sweeter flavour of the tomato in the pasta. 
  • Aromatics: as with pretty much all savoury meals, onion and garlic form the base flavours to build on. These aromatics release a delicious smell, and add depth to the sausage tomato pasta. There is a fair amount of garlic in this dish, with 4 cloves, so this is one for garlic lovers. Of course you can alter to suit your personal preferences. 
  • Pork Sausage: the star of this pasta! These sausages bring a hearty and savoury element to this dish. They’re juicy and compliment the tenderness of the mushrooms. 
  • Tomato Purée: this adds a bright and tangy flavour to the sausage pasta sauce. Its acidity helps to balance out the cream, and prevents the pasta from feeling too heavy. 
  • Pasta: you can use whatever shape you prefer. Personally I went for rigatoni, this allowed the sauce to fill the pasta. This meant that each bite had the ultimate flavour bomb. I wouldn’t recommend spaghetti or any noodle form of pasta for this dish, it’s better to get one that holds its own shape. This is because of the sausage being a solid meat paired with the pasta, rather than say mince in spaghetti bolognese which can form around the noodles.
  • Cream: this is what makes the pasta smooth and dreamy. It gives the sauce a velvety, luxurious texture. The cream helps the sauce be able to stick to the pasta and thicken the sauce. 
  • Cheese: I am a parmesan girly at heart. If I’m adding cheese to almost anything there’s going to be parmesan involved. Parmesan gives the pasta a slightly salty, nutty, flavour. Making it the indulgent dish it is.

How to make this delicious sausage tomato pasta

Cook the pasta.

Bring a large pot of water to a rolling boil. Add the pasta and cook as per packet instructions. Afterwards, drain the pasta and set aside once it has cooked. 

Brown the sausages.

Before adding the sausages to a pan, cut them into bite size rounds. Pop the sausage pieces into a high heat pan with olive oil. Sear until there is a light golden brown crust on the outside. Once the sausages have browned, remove and set aside. 

Sauté the aromatics.

Slice the onions into thin pieces. Add the onion to the same pan the sausages were in, if needed add a little bit more oil and scrape the sausage flavour off the bottom. Crush some garlic in as well. Sauté sliced onion and garlic until the onion starts to lightly caramelise. 

Add the mushrooms.

Remove the stalks from the mushrooms, and peel the outer layer off the tops. Add the sliced mushrooms to the onion and garlic. Now leave the mushrooms to sweat lightly until softened. 

Sausages, tomato purée, and seasonings.

Now add the sausages back into the pan. Add the seasonings (garlic powder, onion powder, paprika, italian herbs) to the sausages, aromatics, and mushrooms.Pour the tomato purée into the pan as well. Let the sauce cook down slightly for a few minutes. 

Finish the sausage tomato pasta sauce.

Pour the cream into the pan alongside the other ingredients. Stir the cream and ensure it is combined. Leave to simmer on a low-medium heat for about 5 minutes. 

Serve.

Add drained pasta into the sausage and sauce, along with ¼ cup of pasta water.  Then take the pasta and sprinkle in your desired amount of parmesan. Now it is ready to serve!

Ingredients
  

  • 4 cloves garlic
  • 1 brown onion
  • 250 g button mushrooms
  • 5 pork sausages
  • ½ cup tomato sauce
  • ½ cup cream
  • 5 cups pasta
  • Parmesan

Instructions
 

  • Boil a large pot of water, add pasta and cook as per packet instructions.
  • Cut sausages in bit size rounds. Then add to a hot pan to brown. After browning, remove and set aside.
  • Slice the onion into slivers. The add onion and garlic in the same pan as the sausage, sauté until translucent.
  • While the garlic and onion are sautéing, slice the mushrooms. Add the mushrooms and sweat until softened.
  • Now add back in the sausages, along with the tomato sauce and seasonings. Let the sauce cook down slightly for a few minutes.
  • Pour in the cream, stir to combine. Simmer for about 5 minutes.
  • Add in drained pasta along with ¼ cup of pasta water.
  • Sprinkle in your desired amount of parmesan, then serve.
