Curried Sausages

You can’t go wrong with this old school, comforting weeknight classic… curried sausages! Yummy sausages submerged in a rich curry gravy, lathered over cheesy mashed potatoes. 

Take a trip to the land down under with these delicious curried sausages. A perfect dinner for the whole family, that won’t break the bank either! This quick and easy, effortless, one pan dinner is always going to be a hit. 

These curried sausages require almost no prep, and are super convenient. With the entire recipe all made in one pot. This dinner is just what you need after a hard day of work! It’s easy to see why it has been passed down through the generations. 

So, what is curried sausages?

Curried sausages is a very basic meal that anyone can make! The key elements to my dish are pork sausages, onion, and carrot; all simmered in a gravy of chicken stock and curry powder. You can definitely amp the heat (spiciness) of your curry; however, it is typically made as a mild savoury flavour. Now, whilst it is a curry gravy, it’s far from Indian and other Asian curry flavours you may have had before. 

Key Ingredients

  • Sausages: when I make curried sausages I use the ‘crappy’ processed ones, which caused quite a controversy on my TikTok (lol). 
  • Carrot: this is a staple vegetable in curried sausages. They add a natural sweetness that helps balance the bold flavour of the curry powder. 
  • Onion: this is part of the flavour base. When suatéed they caramelise the onions develop a perfection foundation for the curried sausages flavour. 
  • Garlic: like onion, garlic is used to build the foundation flavours of the curried sausages. It gives a great umami boost. 
  • Chicken stock: this enhances taste, whilst not being a main flavour it provides great support for the curry powder and other vegetables. 
  • Curry powder: the star ingredient! I use mild curry powder because I am not a spicy gal, but you can use whatever spice level you’d prefer. 
  • Seasonings: whilst the curry powder holds lots of flavour and could be left on its own, I do like to add some extra seasonings for a slight boost. In this recipe I add chicken powder, onion powder, and garlic powder.
  • Cornstarch: this is used as a thickening agent. Make a cornstarch slurry by mixing equal amounts of cornstarch and water. This is added towards the end of cooking time to thicken the curry sauce. 

How do you make curried sausages?

This recipe is as easy as can be. 

Preparation.

Cut the sausages into bite size pieces. Thinly slice the onion. Dice the carrot into small pieces. If you prefer different shapes and sizes then do whatever your heart desires. 

Brown the sausages.

Add the sausages to a high heat pot with oil. Leave them to cook until browned with a slight crust, then remove them from the pot. 

Sauté the aromatics.

Use a slight amount of the chicken stock to deglaze the pot, scraping all the flavour from the sausage off the bottom. Add the sliced onion, and crush in some garlic. Satué until the onions start turning translucent and slightly brown. 

Add the carrots.

To the onions, add the diced carrots. Leave these to sweat for a few minutes to soften.

Curry powder and seasonings.

To the vegetables in the pot, sprinkle in the curry powder along with the seasonings (chicken powder, garlic powder, onion powder). Mix to ensure all is coated, then leave for a couple minutes to cook the seasonings. 

Add the liquid and simmer.

Pour in the chicken stock, and mix in the cornstarch slurry. Pop a lid on the pot and leave to simmer for 15-20 minutes. 

Return the sausages.

After the curry has finished simmering, it is time to add the sausages back to the pot. Leave for a further 5 minutes to heat the sausages through again. 

Serve the curried sausages!

Pour the curried sausages over some cheesy mashed potato… delicious. 

Why should you make these curried sausages?

  1. Cost effective: sausages and pantry spices are typically affordable ingredients, this recipe includes house staples that makes it a great cheap meal.
  2. Flavour combination: despite being a cheap meal with few ingredients, the mix of sausages with a flavourful curry sauce creates a comforting and delicious meal. 
  3. Easy preparation: the final charm that makes these curried sausages perfect, no matter what your cooking skill level is, this recipe is easy for anyone to follow! 

Can I add other vegetables?

Of course! I have actually seen a lot of curried sausages made with peas, personally I’m not a big fan of peas myself so I have not used them. Green beans would also be rather nice I think. 

What do you serve curried sausages with?

A common theme seen on my blog, I love cheesy mashed potatoes. I believe this is the ultimate food to serve curried sausages over! Another popular option is rice, if you are looking for a healthier alternative – this would also probably further budget the meal. 

Can I use different sausages?

The great thing about a recipe like this, many people have their own variation. Some people prefer beef sausages with a beef gravy, you could also use lamb sausages. Now, I used pre cooked sausages for cost effectiveness for the number of servings I was making – I also personally think it adds to the charm of the classic curried sausages. Use whatever sausages your heart desires!

Disclaimer: this is a classic dinner that varies in every household, often passed through generations. This is how I make it, and I think it’s delicious! Some people add coconut cream to theirs, which I’m sure is great too. I have also seen recipes where people add fruit chutney as well… to each their own but again personally I shall pass. The beauty of cooking is how versatile it is, food would be boring if everyone made everything the same!

Ingredients
  

  • 4 sausages
  • 1 carrot
  • 1 onion
  • 3 cloves garlic
  • 1 L chicken stock
  • 4 tbsp curry powder
  • 2 tbsp chicken powder
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 4 tbsp cornstarch

Instructions
 

  • Chop sausages into bite size pieces, then add to a pan and fry until they have a nice brown crust.
  • Remove the sausages, then add in the onion and garlic to sauté.
  • Once the onion is starting to look translucent and has some golden colour to it, add in diced carrots.
  • Now is when you add in the curry powder, onion powder, garlic powder, and chicken powders. Cook these off.
  • Pour in the chicken stock, and a cornstarch slurry (cornstarch and water).
  • Let simmer for 20 minutes.
  • Add sausages in for 5 minutes before serving.
