Parmesan Roasted Brussel Sprouts

Let me introduce you to one of my favourite ways to eat a vegetable… parmesan roasted brussel sprouts. I never thought I would be putting brussel sprouts in my favourite veggies, but here we are! These parmesan roasted brussel sprouts are lightly crispy on the outside, and coated in a delicious seasoning. 

These brussel sprouts make a great simple side dish. They’re super easy to pop in the oven while your stove top dish cooks; plus, to add even more convenience, this recipe is tailored to frozen brussel sprouts. These parmesan roasted brussel sprouts are not just a great side dish, they are beautiful to have on their own! 

My parmesan roasted brussel sprouts are cooked in 3 stages, but don’t let that put you off – this recipe is far from complex. First time they go in the oven is to defrost them and get rid of any liquid, the second stage is to do the main bit of roasting and crispin them up, and finally is to finish it off with the parmesan crust! I add the parmesan at the end so the cheese does not burn.

Key Ingredients

  • Brussel sprouts of course are the star of the show. In this recipe I use frozen store bought brussel sprouts, mainly because they were out of season when I decided to write this recipe up. I will admit I was hesitant as I often find frozen veggies come out mushy when cooked; however, this recipe is tailored to keep that in mind and avoids the mushy veggie outcome. 
  • Parmesan is my favourite cheese, I am a parmesan girly at heart. Not only does parmesan bring a delicious salty nutty flavour, it also crisps up beautifully. 
  • Olive oil helps the seasonings stick to the brussel sprouts. It also provides a smooth coating that ensures the sprouts roast without the seasonings or sprouts burning. Olive oil does not have a high smoke point, unlike avocado oil for example, so it means the brussel sprouts can achieve a nice even crisp. 
  • Seasonings consist of paprika, garlic powder, onion powder, chicken powder, and salt.  These create a harmonious blend of flavours that also brings depth to these delicious brussel sprouts. Paprika adds a nice light smokiness, garlic powder and onion powder bring some umami and aromatic flavours, then chicken powder brings it all together with a slightly salty and savoury punch. On top of that, of course add salt to your preference or as needed. 

Note: if you are going to be using fresh brussel sprouts, I would typically cut them in half with the ends off. Also, skip the first 15 minutes in the oven, this is there to get rid of any liquid from the frozen sprouts. Instead, extend the roasting time to 15 minutes rather than 10 minutes. 

How to make these scrumptious parmesan roasted brussel sprouts 

Preheat your oven to 220℃. 

Add the frozen brussel sprouts onto a baking sheet or tin. Place in the heated oven for 15 minutes. 

Remove the brussel sprouts from the oven. Add the brussel sprouts to a large bowl. Toss the sprouts in olive oil, paprika, garlic powder, onion powder, and chicken powder. 

Add the seasoned brussel sprouts back on the baking sheet or tin. Place into the oven again for a further 10 minutes. 

After the 10 minutes has finished, remove the brussel sprouts from the oven again. Grate or sprinkle parmesan all over the sprouts. 

Finally, the brussel sprouts go back into the oven for a final 5 minutes. They may look a bit charred, but they are perfect! 

Storage

Surprisingly, these are great for leftovers! Let them cool to a lukewarm temperature, to avoid any condensation, then place in an airtight container. When you are ready to eat them again, I can suggest two options – either place them back into the oven for another 10 minutes, or cut them in half and pan fry them. I like cutting them in half and pan frying them, it gives another level of crisp to them, and then I sprinkle some extra parmesan on too.

  • 500 g brussel sprouts (frozen or see notes)
  • ¼ cup parmesan
  • 3 tbsp olive oil
  • 1 tbsp paprika
  • 2 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chicken powder
  • 1 tsp salt

Instructions
 

  • Preheat your oven to 220℃.
